Csirkepaprikás

Ingredients: 2 - 3 pounds of chicken, 2 large onions, 2 light yellow (or one smaller dark green) peppers,
2 medium size tomatoes, oil, salt, pepper (optional), garlic or garlic salt (optional)
Hungarian paprika ....sweet... (NOT optional !!! ), a table spoon of flour, small container of sour cream.

Chop up onions, green peppers, tomatoes, (more is better here).... and simmer in a pot with small amount of oil ..
for a few minutes (stir).
Take it off the heat (!!!!!!), wait a minute or two till oil cools a bit .....then add one heaping tablespoon (or two )
of the Hungarian paprika. Stir and quickly add the chicken pieces. Add salt, (a dash of pepper, a bit of garlic salt)........
Stir.....add just enough water to almost cover the chicken. (less is better, you can add water if needed later.)
Cover and cook at medium heat till chicken is tender. (taste and add more salt if needed).
Spoon out/remove meat into a serving dish and keep warm .
Take a small cup, place two-three tablespoons of sour cream into it .........add two table spoons of flour and stir
with a fork till it is smooth. (you may need an other table spoon of flour to make it thick enough.)
Spoon into this cup , first one, then two...and more and more of the hot meat juice...stirring vigorously.....making sure that this
mixture is as smooth as possible. Stir this flour/sour cream mixture into the rest of the meat sauce...bring to a quick boil and remove from the stove IMMEDIATELLY.
The best of cooks create lumpy sauce here, soooooooo have a strainer handy (with mash-like tiny holes),
as in a tea strainer ...and pour your lumpy sauce through !! (Presto....perfect sauce !!!)
Pour the sauce over the chicken and ENJOY !!!
